Recipe: Pico de Gallo
Sylvie's Version of the Mexican "Pico de Gallo"
Pico de gallo is a famous fresh salsa from Mexico. I always love to add nutrients, prana and protein into the dishes I make. I found sprouted mung beans goes very well with the pico de gallo, and it becomes a complete lunch if you combine it with avocado and tostada (oven dry corn tortilla). It is a very refreshing lunch for sunny days.
Original recipe of pico de gallo:
Soak the onion into lime/lemon juice for at least 1 hour.
Drain half of the lime juice.
Mix all the remaining ingredients.
